Emergency Baking/Cooking Substitutions
Food Amount Substitution
Baking Powder 1 tsp/ 5 ml ¼ tsp/ 1 ml baking soda plus ¾ tsp/2 ml cream of tartar
Balsamic Vinegar 1 tbsp/ 15 ml 1 tbsp/ 15ml sherry or cider vinegar
Bread Crumbs ¼ cup/ 50 ml ¼ cup/ 50 ml finely crushed cracker crumbs, corn flakes, or quick-cooking oats
Chicken, Beef or
Vegetable broth
1 cup 1 tsp/ 5 ml chicken, beef, or vegetable bouillon granules
(or 1 cube) dissolved in 1 cup/ 250 ml boiling water
Buttermilk or
Sour Milk
1 cup/ 250 ml 1 tbsp/ 15 ml lemon juice or white vinegar plus enough milk to make
1 cup / 250 ml. Let stand a few minutes. Or use 1 cup/ 250 ml plain yogurt
Capers 1 tbsp/ 15ml 1 tbsp/ 15 ml chopped green olives
Chocolate-Semisweet baking 2 tbsp/ 30ml 2 tbsp/ 30 ml unsweetened baking chocolate plus 1 tbsp/ 15 ml sugar
Chocolate-Semisweet chips 1 cup/ 250 ml ¾ cup/ 175 ml semisweet baking chocolate chopped
Chocolate-Unsweetened baking 2 tbsp/ 30 ml 3 tbsp/ 45 ml baking cocoa plus 1 tbsp/ 15 ml margarine or shortening
Cornstarch 1 tbsp/ 15 ml 2 tbsp/ 30 ml all-purpose flour or 4 tsp/ 20 ml quick cooking tapioca
